Cucumber Sushi – lunchbox snack

Looking for a healthy snack to liven up the lunchbox? We know it can be hard continuously coming up with fresh, healthy, new ideas to fill the lunchbox – ones that will actually be eaten. This fun and easy to make cucumber sushi is a lunchbox winner! It not only looks great, but it tastes great too with an added Spirulina energy hit!

Ingredients:

4 tablespoons hummus or almond butter

1 teaspoon Lifestream Spirulina Balance or Boost

1 telegraph cucumber

Sesame seeds

Poppy seeds

Directions:

Prepare the filling

Combine the Hummus or Almond butter with the Lifestream Spirulina Balance or Boost.

Mix together well.

Prepare the cucumber

Take a telegraph cucumber and slice it into sushi-sized 1-2 inch pieces. Hollow out the seeds from the centre with a spoon. You can remove some or all of the cucumber skin, then roll the outside in a mix of sesame and poppy seeds.

Fill the cucumber cavity with the hummus or almond butter mixture, sprinkle the seed mixture on top of the sushi filling.

A tasty and healthy lunchbox treat for kids and adults!

Top tip: When you are hollowing out the cucumber leave one end intact so that the filling doesn’t fall out the opposite end.
