Vegan Quinoa Protein Bars

Try these Vegan Quinoa Protein Bars, not only are they vegan friendly and a healthy snack choice they also taste great too! Created by our Lifestream Naturopath Karin Spicer for World Vegan Day.

INGREDIENTS:
⅓ cup quinoa (dry)
1 ⅓ cup water (to cook quinoa)
¼ teaspoon cinnamon
¼ teaspoon nutmeg
20 whole (pitted) dates
½ cup raw almonds
½ cup Lifestream Essential Protein Vanilla
½ cup nut butter (peanut or almond butter
are options)
2 tablespoons ground flaxseed
Topping:
¼ cup dark chocolate chips
1 tablespoon date syrup or agave

INSTRUCTIONS:
1. Add quinoa, water, cinnamon and nutmeg to a small pot, cover and bring to
a boil, reduce heat to a simmer and cook approximately 15 minutes or until all water has been absorbed. Cool to room temperature and refrigerate at least 2 hours or overnight.

2. Using a food processor, or high powered blender, put in dates and pulse until they form a ball. Remove dates and place in a medium mixing bowl. Put almonds into the food processor and pulse until finely minced.

3. Combine dates, almonds, peanut butter, Lifestream Essential Protein and chilled quinoa to the food processor and pulse until ingredients are well combined. Return ingredients to the mixing bowl, shape into 12 x 2-inch x 1-inch bars, about 1-inch thick.

4. For the topping in a small saucepan, add dark chocolate chips and date syrup/agave, melt over low heat. Evenly spread a thin layer of chocolate over the top of each protein bar, return to the refrigerator and allow chocolate to harden. Bars can be stored in an airtight container for several days.

Top tip: For an extra energy boost you can add 2 teaspoons of either Lifestream Spirulina Balance or Boost, or Lifestream Natural B Complex.
